I am not going to allow myself to get down- I know I've been teetering at this weight for months now! Between 195 and 200..... But I feel like maybe I might be breaking through.
I am getting exercise back in to my life, and this is always helpful. Most recently I am doing spinning. I have had 2 classes so far. Tonight will be my third, but mixing it up with some kickboxing as well. Really excited about that!
Also, I have been slowly getting back at the walk/jog routine. Feels really good to be active again!!
Another thing that is helping is having new, refreshing food ideas!!
Here's one I am going to try in a couple days!!
Peachy Chicken
1 ½ lbs frozen boneless, skinless chicken thighs
1/3 cup sugar free peach preserves
1/3 cup barbecue sauce
3 Tbls soy sauce
Place chicken in 2 quart slow cooker. Combine other ingredients and pour over chicken. Cook 3 to 4 hours on high, 6 to 8 hours on low.
Yield: 4 servings. Per serving= 219 Calories; 10g Fat (34.6% calories from fat); 30g Protein; 10g Carbohydrate; trace Dietary Fiber; 122mg Cholesterol; 1185mg Sodium. Exchanges: 1/2 Vegetable; 0 Other Carbohydrates.
